I should start by saying that my kids eat what ever John and I eat, so leftovers are a duh. If they absolutely will not eat what we eat we resort to the PB and J. Hahaha. I have been into putting pureed veggies in almost everything I make lately. It's a sneaky way to get enough servies of veggies into everybody's meal, and most of the time John can't even tell. So squash in mac and cheese, carrot in anything tomato based, etc. If you're interested look into the "Deceptively Delicious" by Jessica Seinfeld. It's a good starting point. I freeze the puree in an icecube tray like they tell you to when you are making baby food. Also, when you just need to make food NOW, my kids love ramen noodles with frozen carrots and peas in it.
I do have that book, actually, and I also try to put veggies in everything, because I know he gets enough of everything else. Almost. It's just in trying to get him to actually eat it when I want him to. He is difficult. I am picky when it comes to food, though. just in the way that I don't feed him anything I wouldn't eat (like hot dogs)...I try to give him the healthiest food possible. Maybe he already just wants the junk!
